“Gesso”, also known “glue gesso” or “Italian gesso” is a traditional mix of an animal glue binder (usually rabbit-skin glue), chalk, and white pigment, used to coat rigid surfaces such as wooden painting panels as an absorbent primer coat substrate for painting. The colour of gesso is usually white or off-white.

Regular Gesso cannot be used for this purpose. You would need an oil-specific ground and/or primer (I will not go into this process today because it is not something I have personally tried). So, once again, you can create an oil painting over traditional Gesso, but you cannot apply gesso over an oil painting.
