If you are using the default B737 panel here is what I did to facilitate a manual engine start. When you have the aircraft loaded, hit ALT (upper menu displays), select OPTIONS, CONTROL, ASSIGNMENTS. In this table you can change the keyboard assignments for the FS controls. Select Engine Commands and find the section that says Starter 1 on/off.
