Method
- Place the fruit in a heat proof bowl.
- Sprinkle in the sugar and gently mix in.
- Seal the bowl well with cling film.
- Place the bowl over a pan of gently simmering water for approximately 8 minutes.
- Remove from the heat and allow the bowl to sit over the ‘bain marie’ until the water has cooled.
